Stuck for a quick supper idea?
It's hard to be a busy mom and always prepare healthy foods. Sometimes the allure of the takeout is hard to ignore at the end of the week when all you want to do is relax a little.
This week, I made one of my "freezer" meals, which I keep on hand for a quick supper, that possibly isn't as healthy as I would like but is still far better than a drive-thrgh!
Firstly, I cook up some frozen spinach and drain well. I then steam some frozen mussel meat and mix with the drained spinach, seasoning well with butter and herb salt. I toss this with some feta or cheddar cheese, spring onions and serve with some veggies in the fridge, like on some left over roast pumpkin, sweet potato or butternut.
